Steamed Banana Cake

Banana Cake with Cranberries
Recipe Source: Magic Steamed Cake by Alex Goh
Preparation: 20 minutes
Makes about 18 cupcakes

Ingredients

A
3 eggs (weigh bout 60g each)
160g castor sugar

B
250g ripe banana
½ tsp salt

C
50g milk

D
240g plain flour
2 tsp double action baking powder
½ tsp baking soda

E
90g corn oil

F
180g sultanas (this I replaced with cranberries.)

Method

  1. Whip A until thick.  Mash B, add it into A, whip until thick.  
  2. Add in C, mix until well-blended.
  3. Add in D, mix until well-combined.
  4. Add in E, mix until well-incorporated.
  5. Add in F, mix until well-blended.
  6. Pour it into greased and floured cup cake mould.  
  7. Steam for 20 minutes.
Notes

  • For Method 6, instead of pouring the batter into the cup cake mould directly, I lined it with paper cup cake for easier removal and eating.
  • If you don't have sultanas or cranberries, just omit this ingredients.  Honestly, it is best to eat it plain and enjoy the original banana flavor! ;)

Steamed Cheddar Cheesecake

Steamed Cheddar Cheesecake

Preparation: 20 minutes

Ingredients

A
3 eggs
100g castor sugar

B
4 slices cheddar cheese
125g milk
80g butter

C
220g plain flour
1 tbsp double action baking powder

Topping (optional)
Some soft butter
Some grated cheddar cheese

Tips
You may add extra  ½ tbsp (or more) Parmesan cheese powder into the batter for stronger cheese taste.

Method
  1. Whip A until sugar dissolved & slightly thicken.
  2. Cook B over double boiler until cheese melted.  Add it into A, mix until well-blended.
  3. Fold in sieved C, mix until well-blended.
  4. Pour it into greased & lined 20cm (8 inch) round mould.
  5. Steam for 30 minutes.  Set aside to cool.
  6. Spread a thin layer of butter on top of the cake.  Place some grated cheddar cheese on top.
